restoring and reconfiguring a cheese processing facility
restoration & modernization
Rebuilding the facility meant more than replacing what was lost. The project involved
47,070-square-feet of alterations within the existing cheese-processing facility, resulting in a final building size of 219,797-square-feet upon completion.
The work reached into some of the plant's most critical production and support spaces, including the casting room, filler room, packaging area, cold storage space, shipping and receiving areas, and supporting mechanical systems. Rather than simply restoring damaged portions of the facility, the project created an opportunity to improve how the operation functioned moving forward.
relocating critical production equipment
Achieving that vision required major renovations throughout the plant, including the relocation of two 30,000-pound casting lines to support a new production layout. To move the massive equipment, crews cut an opening through an exterior wall, built a temporary platform, removed the lines from the facility, and transported them across the plant before reinstalling them in new locations. The work was completed while cheese production continued uninterrupted.

Maintaining plant operations
A significant challenge was completing extensive demolition and major renovations while cheese production continued in adjacent areas of the plant.
To support uninterrupted operations, C.D. Smith implemented carefully coordinated construction sequencing, temporary wall barriers, and negative-pressure controls. These measures allowed plant operations to continue safely while helping prevent contamination within active production areas.
